I’m not sure whether it’s just me, but sometimes I am absolutely craving some ice cream; however, if I go and buy a tub of ice cream, in all likelihood I will eat the whole thing in one sitting (which could be up to 2-3 pints). Perhaps I should be a little more responsible and portion out my ice cream, but then the thought of having to wait a couple of hours for the next tub is no fun.
I had an idea: Why not just make my own ice cream so that I can eat as much as I want, whenever I want? Wouldn’t that be swell? Well it is indeed, until you think about how much it would cost to buy all the ingredients needed for a decent batch of ice-cream at the nearest supermarket.
I was only able to afford a basic grocery shop and I wasn’t exactly going to have enough ingredients needed for a pints worth of ice-cream. Also, it would be quite time consuming to make perfect ice-cream every time, but if I was in the mood for some ice-cream, there’s no way I’d let that stop me from having a tasty treat.
It was at this point in time when inspiration struck me. Why not just combine ingredients which are pretty much interchangeable and then add some whipped cream, maraschino cherries and chopped nuts? It would be really simple and in the end I’d have a delicious ice-cream that would hit the spot every time.
But what kind of basic ingredients could I use? I decided to just stick with the basics so that my ice cream was not too rich but at the same time, it would be delicious and have that certain ‘je ne sais quoi’ – you know, it needs to be creamy, cool and indulgent.
So I made an ice-cream base, added a little bit of sugar and some almond essence/extract and after about one hour, I was ready to roll. No churning, no alchemy required!
I loved the results as well as I liked the fact that it was very simple to make. The ice cream was not overly sweet (which can sometimes be a problem), it was cool and refreshing and very pleasant to eat. It’s also relatively inexpensive to make since you don’t need any expensive ingredients.

- 1 vanilla bean
- 2 cups heavy cream
- 14 oz sweetened condensed milk

- Firstly, slice the vanilla bean the lengthwise and scrape out the seeds. Now set aside.
- In a large mixing bowl, beat the heavy cream at high speed until stiff peaks form. You can also use an electric mixer fitted with a whisk attachment. Add the sweetened condensed milk and vanilla beans, stir thoroughly to combine.
- Place the mixture in a bread pan or freezer-safe container. Cover and freeze for 4 hours or overnight.
- Remove from freezer and set aside for 10 minutes to soften. Transfer to serving bowl. Enjoy!
